I wanted to get this game but I heard the campaign lacked variety and that's a killer for me. Do these expansions add different types of races to the game or are they just cars and tracks?

It's still a pretty barebones experience in terms of game modes. But they've done a terrific job in almost doubling (tripling, maybe) the amount of vehicles and tracks since launch.
