Engage is a good game, but you won't appreciate it after playing Three Houses because Three Houses is a much better game.

Just keep in mind that 3 Houses is a bit different than the more "classic" FEs.
If you then want to jump into that Path of Radiance for example is quite good.

Engage has amazing gameplay but oh my gosh the story is so horrible. It's probably the only game I'd ever suggest is worth playing but completely skipping all cutscenes and dialog.

I'm wondering if OP should just wait it out a couple months for Fortune's Weave? 60FPS Fire Emblem would be a hell of a start. We're not sure if it'll be good, though (in my mind it's already amazing).

I have to agree with this. At least for Fire Emblem, the older games are where it's at. Three Houses was too "bloaty" for me as well, which is why I never bothered to finish it. And I've never touched Engage. I am worried that they will continue this trend with Fortune's Weave.I know quite a few people liked it, but I found 3 Houses to be insanely bloated. Easily the strongest example of Nintendo's recent addition to bloat of anything they've done. It's Fire Emblem, but with a whole Persona-esque school system punctuating the actual battles. The school segments are boring and could be omitted entirely, and they completely ruin the pacing. I lost interest and never finished it.
Personally, I've always been much more of a fan of the GC Path of Radiance, and the GBA/DS era games. Awakening on the 3DS was the last FE I really liked. Those were all much more focused games that gave you satisfying combat, story, and (mostly) great aesthetics. After that, they started padding it with a lot of unnecessary noise.
If you have NSO Expansion Pass, I'd say start with Fire Emblem (aka FE7 aka Blazing Blade) on GBA. It's the first game in the series to be released in the US, and is a great entry point.
Path of Radiance (NSO Gamecube) is another good entry point and some consider it the pinnacle of the series.
