my favorite 2D zelda, the feel of being child and in the mini world is amazing, i wish there will be more.
this is the most played zelda for me, and I literally replaying it right now (again)
Usually it's to add interesting new features -- like the OoT ports which added smooth framerate options, all kinds of randomization you can turn on to make items/dungeons more interesting, widescreen support, quick item switching, and so on
For Link's Awakening, it was to see the game come to life with the view distance no longer capped:
(to be fair, I would never play it that way for your first time since it kills the design intentions, but might be very fun for replaying it)
In the case of Minish Cap, I'm not so sure yet what the benefits would be, surely some kind of new features?
Some big perks are seamless screens and keybindings. You can't usually add more buttons than the console supports with an emulator. With a port like shown above, Link can equip his sword, his shield, and two other items for a total of four instead of just two. This makes the game's pace much better as you don't go into the menus nearly as often.
Game sucked somewhat to be honest. Zero freedom, every path super blocked. Good parts were its art and that you could level up your swordfighting(if I remember correctly). It just didn't feel as polished as the other Zeldas.
