To go with a show nobody has mentioned yet, Rage of Bahamut's opening episode is fantastic. It's all light-hearted beautifully-animated adventure, instantly bringing the characters and setting to life without slowing down the rollicking pace.
How can you not like an episode that introduces its characters like this?

When I watched the first episode, the main thing that went through my mind was just how much budget was this show, because it looked insanely good from beginning to end of that episode

I forgotten all about this show despite being hype for it when I first saw a trailer. How's the series? Good all around?
JoJo's Bizarre Adventure. The fact that they make you hate Dio in the matter of minutes is just crazy. I always like rewatching the scene where Jonathan and Dio fight inside the mansion just because of how good it is. That episode hooked me on the series faster than anything else.

Steins;gate, but you have to watch the whole anime to see why it's the best first episode.
The main plot gets in the way of what made the show really fun but overall it's pretty damn good. Had no right to be considering it's based on some F2P mobile card game.

It's not bad, better than you would expect given its source material.
I disagree with Space Dandy, The episodes after it are so much better

Ouran High School Host Club. I think it was actually the best of the (excellent as a whole by the way) series. The twist, even if a little obvious, was brilliantly executed and everything was so funny and charming.
Cowboy Bebop also had an fantastic start, extremely memorable. This is how you establish a series with a style.

Oh hell yes.
I don't think the thread is about anime where the first episode is THE best, but simply animes that have good openers and aren't something where you have to have a "just suffer through the beginning, it gets better later" added to the recommendation.

I love Bebop's in particular since it plays on the viewer's expectations of a show with that title.

Haikyuu had the best first ep of any sports anime I've watched. Granted I've only watch maybe four or five.
Death Parade had a pretty good first episode, although I also think that you need to watch the second episode to get the full impact. It also had an amazingly uplifting opening for a series called Death Parade.
Strain: Strategic Armored Infantry (aka Soukou no Strain).

Elfen Lied, the OP alone made it super interesting.

Urghh...this one hurts so much. Didn't know anything about Ga-Rei, and it came as a huge wtf moment for me.
Agreed. The use of music at end was damn great, and I read the manga.
